NOODLES AND VEGETABLES EN PAPILLOTE
(Cooked in a paper package)

Ingredients:
1 cup cooked pasta noodles (long or short fusilli is a good choice)
1-2 teaspoons olive oil or clarified butter
¼ cup tomato sauce (optional)
2/3 cup total of any chopped fresh vegetables (broccoli, zucchini, or mushrooms are a good choice)
Pinch of oregano, garlic powder, basil, or any herb desired
¼ cup grated cheese, such as mozzarella (optional)
Salt and pepper to taste
1-2 teaspoons of water
1 large sheet of parchment paper (for cooking/baking), or aluminum foil
Procedure:
1. Preheat oven to 375 degrees
2. Make the papillote by folding the parchment paper in half, and cutting out the shape of half a heart. Unfold the paper and brush the face-up surface of the heart with olive oil or butter.
3. On one half of the greased heart, place cooked noodles, tomato sauce (if using), vegetables, herbs, salt and pepper and grated cheese (if using). If you are not using tomato sauce, top filling with a small amount of olive oil or butter.
4. Sprinkle filling with 1-2 teaspoons of water.
5. Fold other half of the hearts over the filling to have edges meet.
6. Make continuous folds around the edge of the heart, so that the package is completely sealed.
7. Place papillote on a baking sheet and bake at 375 degrees for 5-9 minutes.
8. Remove from oven and place on a serving dish to serve. Cut an X in the paper or foil to open. Be careful as contents will be steaming.
