ZUCCHINI MUFFINS

Ingredients:

1 cup flour (half whole wheat flour + half white flour or all white flour)

1/2 cup oat bran

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

2 eggs

1/2 cup sugar

2 teaspoons vanilla

1/3 cup canola oil

2 cups grated zucchini

1/2 cup chopped walnuts or pecans

Procedure:

1. Preheat to 350 degrees. Line a 12 cup muffin tin with paper or foil liners.
2. In a medium bowl combine the dry ingredients: flour, oat bran, baking powder, baking soda, salt, and cinnamon.. Set aside.
3. In a large bowl beat eggs, sugar, vanilla and oil until fluffy, and then stir in the grated zucchini. These are the wet ingredients.
4. Add the dry ingredients to the wet ingredients and mix until just combined.
5. Stir in nuts.
6. Spoon mixture into muffin cups.
7. Bake at 350 degrees for 15-20 minutes.
