FROSTED ORANGE COOKIES

Makes approximately 24 cookies

Ingredients:

1 stick (1/2 cup) butter, softened

¾ cup sugar

1 egg

½ cup orange juice

2 cups flour

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

Procedure:

1. Preheat oven to 400 degrees. Have ready a large ungreased cookie sheet.

2. In a large bowl, cream together butter and sugar until completely mixed.

3. In a small bowl, beat egg. Add egg and orange juice to the butter/sugar mixture. Mix well. These are your wet ingredients.

4. In a large bowl measure: flour, baking powder, baking soda and salt. Stir with a fork. These are your dry ingredients.

5. Add your wet ingredients to your dry ingredients and mix well.

6. Drop by heaping teaspoonfuls onto an ungreased cookie sheet.

7. Bake at 400 degrees for 7-12 minutes, until lightly browned.

8. Allow to cool completely. Spread tops with frosting (see following recipe) and serve.

Frosting

Ingredients:

2 cups powdered sugar

2 tablespoons butter, softened

4-5 tablespoons orange juice

Procedure:

1. Using the back of a spoon, blend butter into powdered sugar.

2. Stir in orange juice one tablespoon at a time, until a smooth frosting is formed.

*Note: Frosting is best stored in the refrigerator if not used right away; frosted cookies are best kept in the freezer.
