VANILLA PUDDING

8 servings

Ingredients:

1 cup graham cracker crumbs

3 cups 2% fat milk

3 tablespoons cornstarch, diluted with one tablespoon cold water

½ cup sugar

½ teaspoon salt

2 eggs beaten

1 teaspoon vanilla

Procedure:

1. Line the bottom of 8 half-cup serving cups with 1 tablespoon of graham cracker crumbs. Set aside.

2. In a large metal bowl, mix sugar, salt, and cornstarch.

3. Add milk to the large bowl, stirring constantly.

4. Place the large bowl over a pot of boiling water, and stir constantly for 5-10 minutes, until mixture begins to thicken.

5. Cover with a pot lid, and cook another 10 minutes.

6. In a separate bowl, place the beaten eggs.

7. Remove one cup of the thickened milk mixture from the large bowl, and slowly stir it into the eggs.

8. Return the egg and milk mixture to the large bowl, and continue to cook 1-2 minutes.

9. Remove from heat, and stir in vanilla.

10. Pour into prepared cups and chill.
