CHICKEN FAJITAS
4 servings
Ingredients:
1 pound boneless, skinless chicken breast cut into thin strips
Juice of ½ of a lime
½ teaspoon salt
1/8 teaspoon garlic powder
¼ teaspoon oregano
¼ teaspoon chili powder (add more if you want a spicier taste)
1 tablespoon olive oil
4 flour tortillas
Toppings: salsa, chopped fresh tomatoes, shredded lettuce, grated Cheddar, Mozzarella, or Monterey jack cheese
Procedure:
1. In a plastic Ziploc bag or bowl, place sliced chicken, lime juice, salt, garlic powder, oregano, chili powder, and olive oil. Mix well.
2. Heat a non-stick skillet for about one minute on high heat.
3. Add chicken mixture to hot skillet and sauté on medium-high heat until chicken is thoroughly cooked, about 6-8 minutes.
4. Warm tortillas by placing each one on a hot skillet for a few seconds, or wrapping all four in a damp paper towel and microwaving for 20-30 seconds.
5. On the center of each tortilla, place ¼ of the cooked chicken, and toppings in desired amounts. Fold sides of tortilla over the center filling and serve.
