CUCUMBER-TOMATO SALAD

6-8 servings

Ingredients:

1 large English cucumber, sliced into rounds or half moon shapes

1 cup sliced tomatoes (grape or cherry tomatoes sliced in half are good choices)

2 tablespoons lemon juice

½ teaspoon salt

½ teaspoon sugar

1 teaspoon olive oil

Procedure:

1. Place cucumbers and tomatoes in a bowl.

2. In a separate small bowl, whisk lemon juice, salt, and sugar.

3. Whisk in olive oil.

4. Pour dressing over vegetables and serve.
