NOODLE STIR-FRY WITH CHICKEN AND BROCCOLI

8-10 servings

Ingredients:

2 pounds boneless, skinless, chicken breasts cut into thin strips

4 tablespoons honey

½ cup soy sauce

2 tablespoons lime juice

¼ cup canola oil

1 pound Chinese noodles or long pasta noodles, cooked

3-4 cups broccoli florets, cut to bite-size and lightly steamed

Red pepper flakes, if desired

Procedure:

1. In a small bowl, whisk together honey, soy sauce, lime juice and oil. This is your marinade.

2. Place chicken in a medium bowl or large Ziploc bag.

3. Pour ¾ of the marinade over the chicken, and mix well. Set aside the remaining marinade.

4. Heat a large non-stick skillet for about one minute on high heat.

5. Add the marinated chicken to the hot skillet and sauté the chicken on medium-high heat until thoroughly cooked, about 6-8 minutes.

6. Add the noodles, broccoli, and remaining marinade to the skillet. Sauté for a few minutes until noodles and broccoli are coated with marinade, and all ingredients are hot.

7. Sprinkle with red pepper flakes, if desired, and serve.
